Coconut Milk Chocolate Truffles for Valentine's Day

Fifty eight million pounds of chocolate are bought around Valentine's Day each year. Can you believe that! And most of that chocolate is sugar-laden and not the best kind of chocolate for you in the world. I mean chocolate is delicious, but it not all chocolate is created equal. These healthy chocolate truffles will appease your cravings for chocolate without all of the other junk. ​
Ingredients​
  • 12 oz. dark chocolate, at least 60%
  • 1 cup coconut milk, full fat
  • 1/2 tsp instant espresso powder
  • 1 tbsp honey
  • Dash sea salt
  •  cocoa powder for rolling

Instructions
  1. Break up chocolate into pieces and place in a pot.
  2. Over medium heat, melt the chocolate into the coconut milk. Add the espresso powder and honey.
  3. Stir until combined. Remvoe from heat and sprinkle with salt. 
  4. Set the bowl in the refrigerator for 4-6 hours.
  5. Scoop out 1/2 -inch balls with a spoon and place them on parchment paper.  Refrigerate for 20 minutes
  6. Roll truffle balls with your hands to make them evenly round
  7. Roll truffles in cocoa and serve.
