Pineapple Spinach Smoothie

Refresh after a workout or first thing in the morning with the deliciously tangy, deliciously healthy pineapple spinach (and kale) smoothie. The smoothie is loaded with antioxidants, healthy fats and a whopping serving (or two or three) of your greens. 

And if you are anything like us, you prefer to down your greens in liquid form, rather than munch it for thirty minutes. And if you aren't like us, please teach us how!

The Recipe
Ingredients:
  • 1 ½ cups spinach spinach
  • 1 cup kale
  • 1 frozen banana
  • 1 cup coconut milk (full fat, not the water in the can. Think Thai Kitchen that you use for curry)
  • 1/2 cup frozen mango
  • 1 1/2 cup water
  • 2 tbsp chia or flax seed
  • 1 cup chopped pineapple
 
Directions:
  1. Place all of the ingredients into a blender.
  2. Blend until smooth. If it is too thick, add extra water.
  3. Serve.

    **If you don't have kale on hand, then replace it with spinach.
    ​**The coconut milk means from the can, only the thick stuff.
