Simply the Best Breakfast Tofu Tacos

Build a better day with a protein-packed breakfast that isn't loaded with eggs. After all, eggs, if you consume them, can get mundane. To add diversity to your mornings, swap in this healthy, customizable tofu taco breakfast. These tacos are under 250 calories. 
​Recipe
Serves 4

Ingredients:
1 (14-ounce) package extra-firm tofu, drained
2 teaspoons onion powder
1/2 teaspoon garlic powder
1/4 teaspoon turmeric
8 corn tortillas, warmed
Salsa

Directions:
  1. Drain the tofu.  Wrap it in several paper towels, set it on a plate, and place something heavy in top of it. Allow it to sit for at least 15 minutes. Drain the liquid.
  2. Crumble the tofu with your hands or a fork. 
  3. Toss with onion powder, garlic powder and turmeric.
  4. Heat a large skillet over medium heat.
  5. Add the tofu.  Cook until the tofu browns up.
  6. Serve with warm tortillas.

Additional add-ins:
  • Diced onion
  • Sauteed spinach
  • Chopped broccoli florets
  • Chopped summer squash
