Raw Red Beet Salad

Before you go running for the door, just hear us out about this tangy, earthy raw red beet salad.  This raw red beet salad is vibrant and cleansing. The combination of apples, celery and beets marry together in a way that is unspeakable.  Perfect for winter when beets are at their freshest or a twist on the everyday picnic coleslaw.

And if that doesn't do it for you, then how about these little facts:
  • Beets contain betanin and vulgaxanthin, two phytonutrients well studied for their antioxidant, anti-inflammatory and detoxification support.
  • Beets cause red urine in 10-15% of adults!
  • Beets are high in folate, manganese, and potassium.

The Recipe

Ingredients:
  • 3 beets, grated
  • 2 green apples, grated
  • 2 stalks of celery, chopped
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar

Instructions:
  1. Grate the beets and apples. Chop the celery.
  2. In a large bowl, preferably glass, toss all of the ingredients together.
  3. Refrigerate for 2-6 hours before serving.
