Vegan Peanut Butter and Chocolate Pudding for Breakfast

If it looks like pudding and it tastes like pudding, then it must be pudding, right? Not always as we recently proved when testing out a new recipe for you all! We stumbled upon a delicious peanut butter and chocolate pudding using three ingredients: tofu, peanut butter, and cocoa powder.

That's it. And guess what? It's delicious. Doesn't take like tofu. Has the texture and bursting flavor of traditional pudding, but without the dairy or sugar. We didn't even add sugar. Or honey. Or anything. 

Let's just get to it, yeah?

Ingredients
  • 1 package tofu, extra firm or firm or silken. You choose. They all work, we tried them. We prefer extra firm, though.
  • 1/2 cup peanut butter (we used Adam's Peanut Butter)
  • 1/4 cup cocoa powder (yes, you are reading that correctly)

Instructions
  1. In a blender, whip up the tofu until it is completely smooth. And when you think you are done, do again for another 10 seconds.
  2. Toss in the cocoa powder and the peanut butter. Whip it up for another 30 seconds.
  3. Divide between 4-6 dishes. Chill and serve at your leisure. Eat this for breakfast and you will find yourself full until dinnertime!
